GUATEMALA SAN MARTIN JILOTEPEQUE
Producer: the smallholder farms of the Asproguate NGO
Region: San Martín Jilotepeque, in the Chimaltenango department of Guatemala
Preparation: Asproguate collects cherries from the farms; the cherries are depulped and fermented them at Asproguate's wet mills. Their partner, Dinamica, handles dry milling and exporting.
Tasting notes: almond and hazelnut mingle with a crisp apple acidity and caramel sweetness
