Whether it's first thing in the morning or an afternoon coffee pause, there is a rhythmic ceremony to the steps of brewing with a Chemex. After you have brewed several times, you will fine-tune your grind, coffee quantity and timing to your personal tastes. More importantly, you will perfect your spiral pour over technique! The following recipe is how we are brewing in the cafe and at home.
You will need:
- Chemex
- 50 grams of coffee (we are using Les Fauves) ground similar to the coarseness of sea salt.
- Hot water just under boiling (200°F)
- Chemex Filter
- Timer
- Scale
- Mug
STEP 01
• Unfurl your filter and place into your Chemex
• The triple-fold should face your pour spout
STEP 02
• Fully saturate your filter and preheat your Chemex in the process
• Discard the water through the pour spout
STEP 03
• Add your ground coffee (50 grams)
• Shake or tap the glass until the grounds lay flat and even in the filter
STEP 04
• Add 100 grams (3.5 ounces) of water and fully saturate the grounds. Watch your coffee bloom for :30 - :45 seconds.
• Add 200 grams (7 ounces) of water and pour in a spiral motion. Start in the center and spiral to the edges of the filter. Allow the slurry (water + grounds) to drip down to 1-inch from the bottom of the filter.
• Again, add 200 grams (7 ounces) of water and pour in a spiral motion. Start in the center and spiral to the edges of the filter. Allow the slurry (water + grounds) to drip down to 1-inch from the bottom of the filter.
• A third time, add 200 grams (7 ounces) of water and pour in a spiral motion. Start in the center and spiral to the edges of the filter. Allow the slurry (water + grounds) to drip down to 1-inch from the bottom of the filter.
STEP 05
• Remove the filter.
• Enjoy!
